Almost every flavour is represented in this rich and delicious dish, from the sweetish of prawns to the savoury of fish. “Calamaro Ripieno” is present with many variants in every Italian region. Today, the most popular version is the one from Sicily, where this flavourful seafood dish is prepared with tomato sauce, capers, olives, garlic, bread and eggs. Other recipes use ingredients like potatoes or rise for the stuffing instead. However, the basic pattern never changes from a regional version to the other: the squids are emptied, so that they become a small bag that is easy to fill, stuffed and then baked or grilled.
